Serving Temperature and Anti freezing Point Ratio

When you are making gelato the first thing to do is to find out the total PAC (Anti freezing point) in relation to the serving temperature of gelato.

Example: If you have an ordered for a restaurant or you have to storage your gelato in a home batch freezer the serving temperature will be -18* Degrees.
